Recipe: Make your own Boozy Ice Pops this Summer

The sunny season is here, and what better way to celebrate than with some boozy ice pops? We’ve created some tried and tested recipes for you to make deliciously tipsy ice lollies! The recipes below are for single serving pops, but feel free to adjust the amounts in order to make more for a crowd — just remember to keep the ratio of alcohol to other ingredients low, otherwise your lollies might not freeze properly.

Tequila sunrise

Ingredients:

200ml Pineapple juice
1 shot Tequila Blanco
1 Squeeze lime juice
1 Shot grenadine

Method:

In a measuring jug, combine the pineapple juice, tequila and lime juice. Pour the mixture into your moulds and add a splash of grenadine. Add some lime slices for an extra kick and freeze overnight.

Gin & Tonic

Ingredients:

1 Shot gin
200ml Tonic
2 or 3 Lemon slices
1 Squeeze lemon juice

Method:

Add the gin, lime juice and lime zest to the mould. Top with tonic water and lime slices. Freeze overnight and serve.

Pina colada

Ingredients:

1 Shot Malibu or white rum
100ml Coconut yoghurt
100ml Pineapple juice

Method:

Mix together Malibu, pineapple juice, and yoghurt. Make sure that you mix the ingredients thoroughly to avoid a lumpy end result. Pour into moulds and freeze overnight.

Vodka Gummy bear pops

Ingredients:

2 Shots Vodka
Handful gummy bears
200ml Sprite

Method:

In a small bowl, add together the gummy bears and vodka. Leave to soak for a couple of hours, until the gummy bears have absorbed most of the vodka. Place the gummy bears in the bottom of the mould, top with lemonade and freeze overnight.
