Recipe: Put a spring in your step with our R&R cocktail

Spring has arrived in South Africa, which means spending lazy weekend afternoons in the sun — with a drink in hand of course! We’ve created a light and refreshing cocktail to sip while soaking up the sunlight for some much-needed R&R, so check out the recipe below!

Grown-up R&R

Ingredients:

Raspberry syrup:
⅔ cup water
⅔ cup sugar
1 cup raspberries (fresh or frozen)

Cocktail:

2 shots white rum (we used Copeland rum)
2 tbsp Raspberry syrup
200ml Soda Water
1 good squeeze fresh lime juice
Fresh raspberries for serving
Mint for serving (optional)

Method:

For the Raspberry syrup:
Heat the water and sugar in a large saucepan on a low to medium heat. Stir until all the sugar has dissolved. Add the raspberries and stir until the raspberries form a pulp. Once the liquid has reduced, strain it to remove the raspberry seeds and refrigerate until ready to use.

For the cocktail:
Muddle 2 or 3 raspberries with a few mint leaves and the lime juice in the bottom of a tumbler. Add rum and crushed ice and fill to the top of the glass with soda water. Add the raspberry syrup and garnish with a few mint leaves (if desired), fresh raspberries and a lime wedge, and enjoy!
